Spicy Vegetable Soup with Corn and Broccoli

The spicy vegetables with corn and broccoli are turned into a fruity, flavorful delight with pureed tomatoes. Definitely worth trying!

Ingredients

  • 300 ml pureed tomatoes
  • 300 ml meat broth
  • 1 large onion
  • 2 Garlic cloves
  • 1 broccoli head
  • 8 baby corn (canned)
  • olive oil
  • Salt
  • pepper (ground)
  • sugar
  • Tabasco

Instructions

    Wash, trim and cut broccoli into florets. Blanch in boiling salted water for 3 minutes. Drain. Peel and finely chop onion. Drain baby corn and slice into thick pieces. Peel and finely mince garlic.

    Heat 4 tablespoons oil in a pot and sauté the onion until translucent. Add garlic and cook briefly, then deglaze with meat broth. Bring to a boil, add pureed tomatoes, cover and simmer over medium heat for 2-3 minutes. Add broccoli and baby corn and simmer for another 3 minutes. Season with salt, sugar, pepper and 1–2 dashes of Tabasco. The soup also tastes good warm.
