Spicy Tomato Ketchup
A spicy tomato ketchup from Spoonsparrow is much healthier than the store-bought version – but just as delicious!
Ingredients
- 1.5 kg tomatoes
- 2 onions
- 2 Garlic cloves
- 150 g small apples (1 small apple)
- 2 tbsp olive oil
- 3 tbsp maple syrup
- 6 piment berries
- 1 tsp peppercorns
- 1 tbsp mustard seeds
- 1 bay leaf
- 1 clove of mace
- 100 ml apple cider vinegar
- Salt
- Cayenne pepper
- cinnamon powder

Clean, wash and finely chop the tomatoes. Peel and dice the onions and garlic. Clean, halve, core and cube the apple.

Heat oil in a pot. Sauté onions, garlic and apple over medium heat for 2 minutes. Pour in maple syrup and stir to lightly caramelize for 5 minutes. Add piment, peppercorns, mustard seeds, bay leaf and mace; sauté for 3 minutes. Add tomatoes and vinegar; stir occasionally and simmer gently for about 30 minutes.

Pass the tomato mixture through a sieve back into the pot, bring to a boil and reduce for about 10 minutes over low heat. Season with salt, cayenne pepper and a pinch of cinnamon, bottle in clean jars and seal tightly. (Shelf life: about 2–3 weeks)
