Spicy Teriyaki Salmon with Pak Choy

Ingredients

  • 100 ml teriyaki sauce
  • 4 salmon fillets (with skin)
  • 34 tbsp oil
  • Pepper
  • 500 g baby pak choi
  • Salt
  • 120 ml Vegetable broth
  • 0.5 tsp starch

Instructions

    1) Pat the salmon dry, place in a bowl and pour teriyaki sauce over it. Cover and marinate for about 15 minutes.

    Meanwhile clean and wash the pak choi, cut stems into halves or quarters depending on size. Blanch in boiling salted water for about 1 minute, remove, shock in cold water, then drain. Pat salmon fillets dry with paper towels, set aside the remaining marinade.

    2) Heat oil in a grill pan, sear the salmon first on the skin side while drizzling 1-2 spoonfuls of teriyaki sauce over it.

    Flip and sear the other side. Remove, place on preheated plates, sprinkle with pepper and bake in a preheated oven at 100 °C for about 5 minutes. Sauté the pak choi in the remaining oil in the grill pan, remove and keep warm in the oven. Deglaze the pan with 50 ml teriyaki sauce and vegetable broth. Thicken the sauce by whisking in a little starch dissolved in cold water if desired. Serve by arranging the pak choi on top of or beside the salmon.
