Pan-Seared Tuna with Mashed Potatoes

Ingredients
- 800 g fresh tuna fillet
- 3 tbsp Soy sauce
- Sea salt
- freshly ground pepper
- 3 tbsp Sesame oil
- 2 tbsp black sesame seeds
- 4 tbsp diced tomatoes with skins
- 2 spring onions (diagonally sliced)
- 700 g potatoes
- Salt
- freshly ground pepper
- 100 g whipping cream
- 4 tbsp butter
- 2 tsp wasabi paste
- soy sauce

Wash the fish, pat dry, season with salt and pepper, then marinate in soy sauce for 30 minutes in the refrigerator.

For the mash, peel, wash, and chop the potatoes; simmer covered in salted water for about 25 minutes until tender.

Drain the potatoes and let them steam off slightly. Add butter and cream, then mash with a potato masher to a smooth consistency. Season with salt and pepper, and stir in the wasabi paste.

Heat sesame oil in a pan; pat the tuna fillet dry and sear all sides for 4 minutes, tossing it in sesame seeds as you go.

Slice the tuna fillet into thick pieces, arrange on plates with the mashed potatoes, and garnish with tomatoes, spring onions, and a drizzle of soy sauce.
