Asian-Style Beef Noodle Soup

- 500 g beef (e.g., brisket)
- 2 star anise
- 1 tsp Sichuan peppercorns
- 0.5 cinnamon stick
- 1 tsp fennel seeds
- 200 g Chinese noodles
- 2 Spring Onions
- 1 Carrot
- 1 small pak choi
- 1 red chili pepper
- 1 Garlic clove
- 1 tsp freshly grated ginger
- 2 tbsp chopped fresh coriander
- light soy sauce
- 1 tbsp rice wine
- Salt

Wash and pat the beef dry. In a pot, bring about 2 liters of water to a boil. Add one star anise, half a teaspoon Sichuan peppercorns, cinnamon, fennel, and the beef. Ensure the meat is covered with water and let it simmer gently for about two hours. Remove the cooked beef from the broth, allow it to cool, then slice into strips. Strain the broth through a sieve.

Cook noodles according to package instructions, rinse under cold water, and drain.

Wash, trim, and slice spring onions into rings. Peel and dice the carrot. Wash, trim, and cut pak choi into strips. Wash, trim, and chop the chili pepper. Peel and finely mince the garlic.

Bring the broth back to a boil, add the prepared vegetables, chili, garlic, and ginger, and let it steep for 3-4 minutes. Add the beef and noodles, allowing everything to heat through. Finally stir in coriander and season with soy sauce, rice wine, and salt before serving.
