Spicy Quesadillas with Green Salsa

Spicy Quesadillas with green salsa from Spoonsparrow are always a good quick lunch idea when working from home!
Ingredients
- 0.5 bunch Parsley
- 0.5 bunch mint
- 1 clove garlic
- 1 Green Chili Pepper
- 0.5 lime (juice)
- 2 tbsp olive oil
- Salt
- 1 small red onion
- 80 g Corn (canned; drained weight)
- 4 whole wheat tortillas
- 80 g Cheddar (4 slices à 20 g)

Wash parsley and mint, shake dry, pick off the leaves and chop finely. Peel and chop garlic finely. Wash, clean, remove seeds from chili pepper and chop finely as well. Squeeze lime juice. Mix herbs, garlic, chili pepper, lime juice and 1 tbsp olive oil, season with salt and set aside.

Peel, halve and slice onion into thin rings. Drain corn. Spread out tortillas and spread cheddar, onion rings, corn and the green salsa on each tortilla half. Fold in the tortillas. Heat 1 tbsp olive oil in a pan and fry the quesadillas one after another on low heat for 3 minutes on each side. Remove, halve and serve.
