Spicy Pepper Couscous
The spicy pepper couscous from Spoonsparrow always tastes delicious!
Ingredients
- 0.5 lemon
- 250 g couscous
- Salt
- 3 tomatoes
- 3 Garlic cloves
- 0.5 bunch mint
- 0.5 bunch Parsley
- 1 bunch spring onions
- 500 g pickled bell peppers (jar; drained weight)
- 2 green pepperoncini
- 1 handful frisée salad leaves
- 1 stalk tarragon
- 4 tbsp olive oil
- Cayenne pepper
Instructions

Squeeze half a lemon. Prepare couscous according to package instructions with salted water and a splash of lemon juice.

Meanwhile wash, core, and finely dice the tomatoes. Peel and mince the garlic.

Wash, dry, and chop the mint and parsley. Wash, trim, and slice the spring onions into thin rings.

Drain the pickled peppers.

Wash, trim, and slice the pepperoncini into rings. Wash and pat dry the salad leaves. Wash, dry, and pluck the tarragon leaves.

Mix the couscous with tomatoes, garlic, mint, parsley, spring onions, pepperoncini, and olive oil.

Season the couscous with salt and cayenne pepper, mound it on a large platter, and garnish with pickled peppers, salad leaves, and tarragon leaves.
