Ingredients

  • 1 slice of toast bread (from yesterday)
  • 3 tbsp milk
  • 400 g mixed ground beef
  • 1 egg
  • 1 tsp lemon zest
  • Salt
  • Pepper
  • breadcrumbs (as needed)
  • 400 ml meat broth
  • 800 g tomatoes
  • 2 red chili peppers
  • 1 Shallot
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 1 tbsp Tomato Paste
  • Salt
  • a pinch of sugar
  • Pepper

Instructions

    Soak the toast bread in milk for a short time. Add ground beef, egg, and lemon zest; season with salt and pepper and knead well. Add breadcrumbs as needed until the mixture is easy to shape. Form small balls from the mixture.

    For the tomato sauce, blanch the tomatoes, shock them, peel, quarter, deseed, and dice. Place the seeds in a sieve and catch the juice. Wash, trim, and finely chop the chili peppers. Peel and finely chop the shallot and garlic; sauté them in hot olive oil until translucent, stir in tomato paste, add the tomatoes with their juice, and simmer gently for about 20 minutes until thickened. Season with salt, sugar, and pepper.

    Add the meatballs to the boiling broth, reduce heat, and let them cook for about 5 more minutes.

    Remove the meatballs with a slotted spoon, drain, swirl into the sauce, and serve.
