Spicy Mango Salad

A spicy mango salad featuring sheep cheese, which is especially rich in calcium—just like low-fat feta! It pairs wonderfully with mango.

Ingredients

  • 300 g small ripe mango (1 small ripe mango)
  • 4 stalks chives
  • 1 stem basil
  • 0.5 Organic lemon
  • pepper (ground fresh)
  • 10 g sheep cheese (9% fat)

Instructions

    Wash the mango, pat dry and peel with a paring knife. Slice the fruit into thick wedges, cube them, and place in a bowl.

    Rinse the herbs and shake off excess water. Cut the chives into rings. Pick basil leaves, set aside some for garnish, and cut the rest into fine strips.

    Squeeze the lemon, pour the juice over the mango cubes along with the chives and basil strips. Season with pepper and let sit for 10 minutes to meld flavors.

    Plate the mango salad. Pat the sheep cheese dry with paper towels and crumble it over the salad using your fingers. Garnish with fresh basil leaves.
