Spicy Lentil Muffins

Ingredients
- 1 handful Arugula
- 2 untreated oranges
- 1 EL lemon juice
- 2 EL walnut oil
- pepper (ground)
- 180 g brown lentils
- Salt
- butter (for the molds)
- Flour (for the molds)
- 5 eggs
- 150 g freshly grated Parmesan
- 2 EL fresh chopped parsley
- 2 EL flour
- 1 EL lemon juice
- 1 Garlic clove
- Cayenne pepper
Instructions

Rinse the lentils, put them in a pot and fill with enough water to cover them well. Salt, bring to a boil and simmer on medium heat for 40-50 minutes.

Drain the lentils, rinse under cold water and let them drain thoroughly.

Preheat the oven to 180°C fan.

Grease the muffin tin cavities and dust with flour.

Separate the eggs and mix the yolks with cheese, parsley, lentils, flour and lemon juice; peel the garlic, press into the lentil mixture and season with salt and cayenne pepper. Beat the whites with a pinch of salt until stiff and fold in.

Fill the prepared cavities with the batter and bake in the preheated oven for 25-30 minutes.

In the meantime wash, trim and dry the salad.

Peel the oranges, removing the white pith as well, and separate the fruit segments from the membranes. Mix lemon juice with oil and season with salt and pepper.

Remove the finished muffins from the oven, let cool, release from molds and place on plates. Garnish with arugula and orange segments and drizzle with vinaigrette before serving.
