Ingredients

  • 100 g melted dark chocolate
  • 2 Eggs
  • 75 g sugar
  • 50 ml plant oil
  • 250 g flour
  • 2 tsp Baking powder
  • 0.5 tsp Baking soda
  • Pinch Salt
  • 2 tbsp cocoa powder
  • 10 ml rum
  • 150 g dark couverture (min 55% cacao)
  • 75 g whipping cream
  • 10 ml orange liqueur (or rum)

Instructions

    Preheat the oven to 180 °C with top and bottom heat. Place paper cups into the muffin tin slots. Beat the eggs with sugar and plant oil. Stir in the chocolate. In a bowl mix flour, baking powder, baking soda, salt pinch, and cocoa powder. Sift over the egg mixture and fold in, adding rum as you go. Fill the paper cups halfway with batter. Bake on the middle rack for 20‑25 minutes (test with a toothpick). Carefully lift muffins from the tin and cool on a wire rack.

    For decoration chop the couverture. Heat the cream, pour over the chocolate, and stir until melted. Add liqueur, let cool, then spoon onto the muffins.
