Ingredients

  • 1 lamb leg (about 1 kg)
  • 1 bunch of marjoram
  • 4 cloves garlic
  • 3 lemons
  • 3 tbsp honey
  • Salt
  • freshly ground pepper
  • 2 tbsp olive oil

Instructions

  1. 1.

Wash the lamb leg, pat it dry and make shallow cuts about 1 cm deep all around with a sharp knife.

  2. 2.

Remove marjoram leaves. Peel the garlic and cut into sticks. Insert both into the cuts and rub the lamb with 1 tbsp of olive oil.

  3. 3.

Brush the roasting pan with the remaining oil and place the lamb inside. Season with salt and pepper, then bake in a preheated oven at 160°C for about 2 hours. Add liquid as needed during cooking.

  4. 4.

Squeeze the juice of two lemons and mix with honey. Brush this mixture over the lamb repeatedly. Halve the remaining lemon and add it to the pan during the last half hour of roasting.
