Spicy Honey Lemon Chicken

A spicy honey lemon chicken from Spoonsparrow combines fruity and savory ingredients in a delightful way.

Ingredients

  • 3 organic lemons
  • 1 whole roasted chicken (1.2 kg)
  • Salt
  • Pepper
  • 4 sprigs thyme
  • 50 g dried plums
  • 600 g small potatoes
  • 2 Cinnamon sticks
  • 4 kaffir lime leaves
  • 100 g coarsely chopped peanuts
  • 60 g melted butter
  • 200 ml cloudy apple juice
  • 2 tbsp honey

Instructions

    Wash lemons, dry rub and halve them. Pat chicken dry, season inside and out with salt and pepper. Wash thyme. Stuff the chicken with thyme, plums, and two lemon halves.

    Rinse potatoes thoroughly and arrange in a greased roasting pan with remaining lemons, cinnamon sticks, kaffir lime leaves, and 2/3 of the peanuts. Place the chicken breast-side down on top, brush with butter, and roast at 180°C (160°C fan) for 15 minutes.

    Pour apple juice over the chicken and continue roasting for another 50–60 minutes. During the last 30–40 minutes flip the chicken to the breast side and brush again with butter. For the final 10 minutes stir honey into the remaining butter, brush onto the chicken, and sprinkle with the rest of the peanuts.

    Season the pan juices with salt and pepper before serving. Remove dried fruits from the chicken; carve and plate. Serve the dried fruits with pan juices and potatoes alongside the honey lemon chicken.
