Spicy Fruit Curry

Ingredients

  • 200 g honeydew melon
  • 200 g cantaloupe melon
  • 200 g pineapple
  • 200 g mango
  • 1 Banana
  • 1 apple
  • 1 Shallot
  • olive oil
  • 400 ml coconut milk
  • 60 ml heavy cream
  • 2 tbsp Curry Powder
  • sugar
  • Salt
  • lime juice
  • 40 g chopped walnuts
  • 1 Tbsp mixed peppercorns

Instructions

    Peel, core, and use a Parisienne to scoop balls from the melon flesh; cut remaining fruit into bite‑size pieces.

    Remove skin from shallot, finely chop, and sauté in 1 tbsp oil until translucent. Add fruit, pour in coconut milk and cream, stir in curry powder, and simmer over medium heat for 5–10 minutes until slightly thickened. Season with a pinch of sugar, salt, and a splash of lime juice; divide into glasses and sprinkle with walnuts and peppercorns before serving.
