Ingredients

  • 4 shallots
  • 50 g walnuts
  • 2 tbsp coconut flakes
  • 600 g beef fillet
  • 1 tbsp ghee (or clarified butter)
  • 0.5 tsp ground turmeric
  • 1 tsp yellow curry paste
  • 200 ml vegetable broth
  • 125 ml Coconut milk
  • 100 ml pineapple juice
  • Salt
  • chili for garnish

Instructions

    Peel and finely dice the shallots.

    Mix the walnuts with the coconut flakes and grind them finely.

  3. 3.

    Wash, pat dry, and cut the beef into bite‑size pieces.

    Brown the beef in hot ghee all over, then add the shallots and cook together.

    Add the walnut mixture and coconut flakes, cooking briefly more.

    Sprinkle the turmeric, add the curry paste, and deglaze with vegetable broth.

    Pour in the coconut milk and pineapple juice, stir, cover, and let simmer gently for 2–3 minutes until the beef is cooked through.
