Spicy Filo Pie with Leek and Feta

Ingredients
- 3 stalks leek
- 3 cloves garlic
- 100 g dried, pickled tomatoes (in oil)
- 2 tbsp olive oil
- Salt
- Pepper (freshly ground)
- nutmeg
- 350 g filo dough
- 50 g melted butter
- 200 g feta

Preheat the oven to 180°C with upper and lower heat. Clean, wash, dry, and cut the leek into thin rings. Peel and finely chop the garlic. Drain the tomatoes well and slice them into thin strips.

Heat oil in a pan and sauté the leek, garlic, and tomatoes for 1-2 minutes while stirring. Season with salt, pepper, and nutmeg, remove from heat, and let cool slightly.

Line four oven‑proof ramekins on parchment paper with filo sheets so that half of each sheet hangs over the edge. Brush a little butter on the sheets and layer another sheet on top. Repeat until all filo is used.

Spread the leek mixture over the dough, crumble feta on top, fold the excess dough toward the center, press together, and brush with remaining butter. Bake in the preheated oven for 15‑20 minutes until golden brown. Remove, loosen from the pan, cut into pieces, and serve.
