Spicy Cream Puffs

Savory cream puffs with dried cherries: a tasty treat for vegetarians. Calcium from cheese, milk and fresh cheese supports bone health.

Ingredients

  • 125 ml Milk (1.5% fat)
  • 75 g butter
  • Salt
  • 175 g flour
  • 3 medium eggs
  • 75 g Stilton (without rind)
  • 150 g fresh cheese (13% fat)
  • 0.5 bunch Parsley
  • 50 g soft dried cherries
  • Pepper

Instructions

    Bring the milk, 125 ml water, butter and a pinch of salt to a boil.

    Add all the flour at once and stir with a wooden spoon until the dough forms a lump that lifts from the pot bottom. Transfer the dough to a bowl and let it cool for 10 minutes.

    Gradually whisk in the eggs into the dough.

    Line a baking sheet with parchment paper. Spoon the dough into a piping bag fitted with an 8‑mm round tip and pipe small dots onto the parchment. Bake in a preheated oven at 200 °C (180 °C fan, gas level 3) for 20 minutes (15 minutes fan), on the second rack from the bottom.

    Remove the puffs from the oven, cut them horizontally in the middle immediately, place them on a cooling rack or wire grid and let cool.

    Whisk the Stilton with the fresh cheese until smooth. Wash the parsley, shake off excess water, pluck leaves. Set aside some for garnish, chop the rest.

    Chop the dried cherries. Mix them with the chopped parsley into the cheese mixture and season with salt and pepper. Fill the cooled puffs with the cheese filling and serve garnished with a touch of parsley.
