Colorful Macarons
Smart dessert: Colorful macarons (French petit fours) are perfect for gifting, bringing along and snacking.
Ingredients
- 0.5 lemon
- 4 egg whites
- 150 g coconut sugar
- 200 g ground almonds
- 1 tsp cocoa powder
- red beet powder (optional)
- matcha tea powder (optional)
- turmeric powder (optional)
- 100 g dark chocolate
- 100 g white chocolate
- 2 tbsp whipping cream (30% fat)
- 20 g butter

Squeeze the lemon. Beat egg whites with 2 tsp lemon juice to stiff peaks, gradually adding coconut sugar until glossy and firm; fold in almonds gently. Divide dough and color each portion with cocoa or red beet, matcha, or turmeric powder.

Line a baking sheet with parchment paper. Pipe small half-spheres about 2 cm diameter onto the sheet using a large round tip. Bake at 140°C (fan 120°C) for about 25 minutes, leaving the oven door slightly ajar.

Heat water in a saucepan for a bain-marie. Chop dark and white chocolate into small pieces and melt them gently over the water bath. Whisk cream and butter into both chocolates with a whisk. Color the white chocolate as desired. Let the mixture cool slightly.

Spread half of the macarons with the various fillings and assemble with the remaining shells.
