Spicy Carrot Protein Bread

A spicy carrot protein bread from Spoonsparrow tastes not only wonderfully moist but also keeps you full for a long time.
Ingredients
- 2 carrots
- 250 g low-fat quark
- 4 eggs
- 250 g ground almonds
- 130 g flax seeds
- 20 g oat bran (3 tbsp)
- 30 g soy flour (2 tbsp)
- 30 g melted flakes (4 tbsp)
- 1.5 sachets baking powder
- 60 g sunflower seeds
- 0.5 tsp bread spice
- 1 tsp salt

Line a loaf pan with parchment paper. Clean, peel and finely grate the carrots. Mix quark and eggs with a hand mixer until smooth. Stir in almonds, flax seeds, oat bran, soy flour, melted flakes, baking powder, sunflower seeds and carrot grates into the quark mixture.

Season the dough with bread spice and salt, pour it into the pan and spread evenly. Bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 70–80 minutes.

Let the loaf cool briefly. Then remove it from the pan and let it cool completely on a wire rack. Slice before serving.
