Spicy Beef Burger

Ingredients
- 1 sardine fillet
- 1 tsp Capers
- 80 g black olives (pitted)
- 1 Garlic clove
- 0.5 tsp honey
- 2 tbsp olive oil
- pepper (ground)
- a splash lemon juice
- 400 g ground beef
- 1 egg yolk
- 1 tbsp breadcrumbs
- 2 tbsp Vegetable oil
- 4 sesame burger buns
- 1 handful Arugula
- 1 Red Onion
- 4 Tbsp mayonnaise
- 4 tbsp grainy mustard
- 50 g Parmesan

Pat the sardine fillet dry and combine with capers, olives, peeled garlic clove in a blender. Add honey and blend into a fine paste while slowly adding olive oil until thickened; season with pepper and lemon juice.

Place ground beef in a bowl. Add tapenade, egg yolk, breadcrumbs and mix well. Form 4 patties from the mixture and fry in a hot pan with vegetable oil for 3‑4 minutes on each side until golden brown.

Halve buns horizontally and toast cut sides. Wash, dry arugula; peel, halve, slice red onion. Mix mayonnaise with mustard. Grate parmesan finely.

Spread mustard mix on bun tops, place patties on bottom halves. Top with cheese, arugula, onions, cover with top bun and serve.
