Pan‑fried Asparagus

Ingredients

  • 1.5 kg white asparagus
  • 4 tbsp rapeseed oil
  • 1 tbsp Sesame oil
  • Salt
  • 1 tsp sugar
  • 1 Garlic clove
  • 2 tbsp Light soy sauce
  • 1 tbsp freshly chopped parsley

    Peel the asparagus and trim off the woody ends. Cut the spears lengthwise in half. Heat both oils in a pan, add the asparagus, salt and sugar. Peel the garlic and squeeze it into the pan. Sauté the asparagus for 2–3 minutes. Add the soy sauce and a splash of water. Cover and cook for 10–12 minutes until al dente. Remove the lid, let the liquid evaporate and glaze the asparagus. Stir in the parsley.
