Spiced Rice with Mussels

The spiced rice with mussels from Spoonsparrow brings wonderful flavors and plenty of healthy nutrients to your plate!

Ingredients

  • 500 g mussels
  • 250 g tomatoes (peeled, seeded and diced)
  • 200 g Green beans
  • 3 shallots (chopped)
  • 2 Garlic cloves
  • 0.5 tsp turmeric
  • 0.5 tsp paprika powder
  • 5 coriander seeds
  • 2 cloves of mace
  • 3 peppercorns
  • 2 cardamom pods
  • 0.333 cinnamon stick
  • 0.5 tsp nutmeg (freshly grated)
  • 3 tbsp olive oil
  • 160 g basmati rice
  • 350 ml vegetable broth
  • Salt
  • pepper (ground fresh)
  • parsley (1 tbsp chopped)
  • coriander (1 tbsp chopped)

Instructions

    Clean mussels thoroughly and discard any that do not open.

    Crush all whole spices in a mortar. Heat oil in a pot, sauté shallots, pressed garlic and the crushed spices, add diced tomatoes and cook for a few minutes, pour in broth and stir in rice, bring to a boil and simmer covered on low heat for about 5 minutes; then add mussels and trimmed beans and continue to simmer for another 15 minutes. Remove from heat and let stand for about 10 minutes.

    Season the spiced rice with salt and pepper and fold in herbs.
