Ingredients

  • 500 g Turkey breast fillet
  • 500 g carrots
  • 250 g frozen peas
  • 2 tbsp olive oil
  • 1 tbsp butter
  • Salt
  • Pepper (freshly ground)
  • 300 g long‑grain rice
  • 300 g corn (1 can)
  • 600 ml Vegetable Broth

Instructions

    Set the rice with the broth, bring to a boil and simmer covered on low heat for about 20 minutes until liquid is absorbed.

    Slice the turkey into strips. Peel and slice or dice the carrots; thaw the peas.

    Sear the turkey strips in hot oil briefly, season with salt and pepper, remove and keep warm.

    Add butter to the oil, sauté the carrots for about 3 minutes. Stir in rice, peas, drained corn, add a cup of water, season with salt and pepper, and steam covered for about 5 minutes.

    Fold the cooked rice and seared turkey strips into the vegetables, adjust seasoning, and serve.
