Ingredients
- 200 g Spelt
- 2 stalks leeks (thin)
- 500 g fava beans (fresh or frozen)
- 1 bunch arugula
- 2 cloves garlic
- 2 tbsp white wine vinegar
- 3 tbsp Lemon juice
- 6 tbsp Olive oil
- Salt
- Pepper (freshly ground)
Instructions

Soak the spelt in water overnight. The next day, cover with soaking water and cook over medium heat for 25 minutes. Drain and let rest.

Blanch the fava beans in boiling salted water for about 4 minutes, then drain and set aside.

Wash and trim the leeks; cut the white and light green parts into ~1 cm pieces.

Rinse the arugula, shake dry, and tear into smaller pieces if desired.

Whisk together vinegar, lemon juice, oil, garlic, salt, and pepper. Toss with the salad ingredients. Arrange in bowls and serve.
