Spelt Ball Soup

Ingredients
- 250 ml vegetable broth
- 2 EL Butter
- Salt
- 150 g spelt grits
- 1 egg
- Nutmeg (freshly grated)
- 1 l vegetable broth
- 1 Carrot
- pepper (ground)
- 2 EL chives
Instructions

Bring the broth with butter and a pinch of salt to a boil. Sprinkle in the grits while stirring until the mixture lifts from the pot bottom. Remove from heat and fold in the egg. Season with salt and nutmeg, then let cool.

Return the broth to a boil. Peel and slice the carrot into rounds. Add to the soup and season with salt and pepper.

Shape small balls from the spelt mixture and drop them into the hot soup. Do not boil further; allow to cook for about 10 minutes.

Serve sprinkled with chives.
