Ingredients

  • 400 g flour
  • Salt
  • Pepper (freshly ground)
  • 0.5 tsp caraway seeds
  • 4 eggs
  • nutmeg
  • 200 ml milk
  • 4 tbsp butter
  • 200 g Emmental cheese (grated)
  • 3 red onions
  • 150 g smoked ham (sliced)
  • 1 tsp red wine vinegar

Instructions

    Slice the ham into strips. Peel and cut the onions into thin rings. Roast the ham in hot butter, then remove. Sauté the onions in the cooking fat for about 10 minutes, season with salt and pepper, sprinkle with caraway seeds, and drizzle with red wine vinegar.

    Bring a large pot of salted water to a boil.

    Whisk flour, eggs, nutmeg, milk, and a pinch of salt into a thick dough. Immediately scrape the spätzle dough from a wet board into the boiling water using a spätzle scraper or knife, letting them cook for several minutes until they rise to the surface.

    Remove the spätzle with a slotted spoon and drain. Toss with grated cheese, ham, and onions, then serve on plates.
