Beef Curry with Sweet Potato and Rice

Ingredients

  • 500 g beef (steak)
  • 2 tbsp red curry paste
  • 1 large onion
  • 500 g Sweet potatoes
  • 1 can pizza tomatoes
  • 150 ml coconut milk
  • 2 Bay leaves
  • coriander (for garnish)
  • 3 tbsp oil

Instructions

    Cut the beef into large cubes and sear in a wok over high heat with 2 tbsp oil until browned on all sides. Remove from wok. Dice the onion and sweet potato. Heat remaining oil in the wok, add curry paste and sauté briefly. Add onion and sweet potato, stir-fry, then return beef to the wok. Pour in coconut milk and pizza tomatoes. Bring to a gentle simmer over low heat and let cook for 20-30 minutes.
