Spätzle Soup

Ingredients
- 1.2 l clear broth (pre-made or homemade)
- 125 g flour
- 2 Eggs
- Salt
- pepper (ground)
- 1 heaping tbsp freshly ground poppy seeds
- 0.5 untreated lemon (zest)
- 12 fresh lemon balm leaves

Whisk flour, eggs, a pinch of salt, pepper and 3 tbsp water into a smooth, not too runny dough. Add poppy seeds, lemon zest and finely chopped lemon balm (reserve a few leaves for garnish). Beat until the dough bubbles.

Bring plenty of salted water to a boil in a large pot. Press or drop the dough into the bubbling water using a spätzle press or a board. The spätzle are done when they float to the surface. Remove with a slotted spoon and drain.
