Spargeltarte

- 200 g Flour
- 120 g butter
- 1 egg
- Salt
- 2 bundles green asparagus
- 200 g Black Forest ham
- 2 Eggs
- 100 ml whipping cream
- 200 g Sour Cream
- 200 g grated cheese (e.g., Emmental, Gouda)
- Salt
- pepper (ground)
- nutmeg (ground)
Instructions

Combine all dough ingredients in a bowl and knead quickly into a smooth dough; wrap in foil and refrigerate.

Peel the lower third of the asparagus and blanch in simmering salted water for about 8 minutes, not fully cooked. Remove, shock in cold water, and pat dry.

Whisk cream with sour cream, cheese, and eggs. Season with salt, pepper, and nutmeg.

Roll dough into a long rectangle, line a large square tart pan. Alternately place asparagus and ham in the pan. Spread cheese‑cream mixture over the asparagus, gently shake to fill all crevices. Bake immediately in a preheated oven at 200°C for about 30 minutes until golden brown. Remove and serve.
