Potato Skillet with Green Beans and Turkey Bacon

Ingredients
- 1 kg new potatoes
- Sea salt
- 400 g Green Beans
- 50 g turkey bacon
- 4 Spring Onions
- 2 cloves garlic
- 2 sprigs Rosemary
- 4 sprigs thyme
- 2 sprigs bean herb
- 2 tbsp olive oil
- black pepper (freshly ground)

Wash the potatoes and boil them in salted water for about 25 minutes. Drain, cool slightly, and cut lengthwise in half. Meanwhile, trim and wash the green beans, then boil them in salted water for about 8 minutes until al dente. Shock in cold water and drain well. Dice the turkey bacon into small cubes. Trim and wash the spring onions, rinse, and cut into ~4 cm pieces. Peel the garlic and slice it thinly. Wash the herbs, shake dry, and chop.

Heat a non-stick skillet with hot oil over low heat and fry the potatoes for about 10 minutes until golden brown. Add the turkey bacon, spring onions, and garlic. Season with salt and pepper, then stir occasionally and cook for another 8 minutes. Finally, fold in the green beans and herbs, sauté for 2–3 minutes, and serve.
