Spaghetti with Vegetable Sauce

Ingredients
- 400 g Whole Wheat Spaghetti
- Salt
- 2 zucchinis
- 5 tomatoes
- 200 g mushrooms
- 2 shallots
- 2 Garlic cloves
- 1 tbsp Olive Oil
- Pepper
- 2 sprigs oregano
- 30 g parmesan (1 piece)

Cook spaghetti in boiling salted water according to package instructions until al dente. Drain and set aside.

Meanwhile, wash and dice the zucchini. Wash tomatoes, remove stems, and dice the flesh. Clean mushrooms and slice them. Peel and finely chop shallots and garlic.

Heat oil in a pan and sauté shallots and garlic. Add mushrooms and zucchini and cook for about 2–3 minutes. Add tomatoes and simmer another 3–4 minutes. Season with salt and pepper. Rinse oregano, shake dry, and chop the leaves. Mix spaghetti into the vegetable sauce, stir well, and serve on plates topped with grated Parmesan.
