Ingredients

  • 400 g spaghetti
  • 400 g Tomatoes
  • 125 g Parma ham (thin slices)
  • 40 g parmesan (block)
  • 4 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 0.5 bunch Basil

Instructions

    Cook spaghetti in boiling salted water until al dente.

    Briefly blanch tomatoes, shock in ice water, peel, quarter and cut slightly smaller.

    Slice Parma ham into narrow strips.

    Grate parmesan with a microplane.

    Reserve about 1 cup of pasta cooking water. Drain pasta and combine with reserved water, olive oil, tomatoes, and ham; season with salt and pepper. Plate and garnish with grated parmesan and basil leaves.
