Spaghetti with Swiss Chard

The biggest advantages of spaghetti with Swiss chard: low calories, little fat, but plenty of minerals and vitamin A!

Ingredients

  • 1 Shallot
  • 200 g shiitake mushrooms
  • 500 g Swiss chard (1 small stalk)
  • Salt
  • 1 tbsp Olive Oil
  • 2 tsp mild curry powder
  • 50 ml Vegetable broth
  • 100 g crème fraîche
  • Pepper
  • 300 g whole wheat spaghetti (or whole wheat penne)

Instructions

    Peel and finely dice the shallot.

    Clean the mushrooms. Trim stems, cut caps in half or quarters depending on size.

  3. 3.

    Wash the Swiss chard, remove stems, chop leaves into small pieces. Boil salted water for the whole wheat pasta.

    Heat oil in a non‑stick pan. Sauté the shallot over medium heat until translucent. Add mushrooms and cook. Sprinkle curry powder and continue sautéing.

    Stir in the Swiss chard leaves. Add broth and crème fraîche, season with salt and pepper. Simmer over medium heat for 8–10 minutes.

    Meanwhile, cook the whole wheat pasta according to package instructions.

    Drain the pasta in a colander, reserving 2–3 tbsp of pasta water. Stir the reserved water into the Swiss chard‑mushroom sauce. Drain the pasta well and serve with the Swiss chard mixture.
