Spaghetti with Scampi

Ingredients
- 20 scampi (raw and whole)
- 6 tomatoes
- 1 onion
- 1 Garlic clove
- 400 g spaghetti
- Salt
- 1 dried peperoncino (crushed)
- 2 tbsp olive oil
- 150 ml dry white wine
- 2 fresh bay leaves
- 1 tbsp freshly chopped parsley
- a pinch of sugar
- black pepper (ground)
Instructions

Leave the 8 scampi whole, just cut a slit along the back, devein, rinse and pat dry. Separate the remaining scampi from their shells (break or cut), slice along the back and devein. Rinse, pat dry and cut into pieces.

Blanch the tomatoes, shock them, peel, quarter, core and dice. Peel the onion and garlic and finely chop both.

Cook the pasta in salted water until al dente.

Sauté the onion and garlic with the peperoncini in 2 tbsp hot oil for 1-2 minutes until translucent. Deglaze with wine and let reduce slightly. Add the tomatoes with the chopped scampi and bay leaves, simmer for 3-4 minutes. Season with salt, sugar and pepper.

Brown the whole scampi in the remaining oil in a pan for 2-3 minutes. Season with salt and pepper.

Drain the pasta and mix it into the sauce. Plate the pasta, top each serving with two scampi, and serve.
