Spaghetti with Roasted Red Pepper Sauce

Ingredients

  • 500 g spaghetti
  • 500 g red bell peppers
  • 100 ml olive oil
  • 4 Garlic cloves
  • 40 g pine nuts
  • 2 red chili peppers
  • 100 g Parmesan
  • 2 tbsp paprika spread (from tube)
  • 0.25 bunch basil
  • Pepper
  • Salt

Instructions

    Quarter the bell peppers, remove seeds and place skin-side up on a parchment-lined baking sheet. Roast in preheated oven at 270°C using grill function on top rack until skins blister; remove from oven and peel off skins.

    Heat salted water to boil and cook spaghetti according to package instructions until al dente. Wash chilies, slit lengthwise, deseed, remove white membrane and finely dice. Peel garlic and roughly chop. Blend roasted pepper pieces with garlic, pine nuts, chili, and olive oil into a puree.

    Grate parmesan finely. Stir parmesan and paprika spread into the pepper puree, seasoning with pepper and salt. Rinse basil and shake dry; roughly chop half. Drain spaghetti and toss with pepper pesto on plates, sprinkle with remaining basil and serve.
