Spaghetti with Ground Meat Sauce

Ingredients

  • 1 Carrot
  • 100 g Celery Root
  • 1 onion
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 400 g ground beef (beef)
  • 2 tbsp Tomato paste
  • 150 ml red wine
  • 250 ml rich meat broth
  • Salt
  • a pinch sugar
  • Pepper
  • 300 g passata
  • 400 g spaghetti
  • 2 tbsp freshly chopped oregano
  • 50 g Parmesan (freshly grated)

    Peel the carrot, celery root, onion and garlic and finely dice all ingredients. Brown the ground beef in hot oil while stirring until crumbly. Add the prepared vegetables and cook for another 2-3 minutes to soften. Stir in tomato paste, deglaze with wine, then pour in meat broth. Season with salt, sugar and pepper, then fold in passata. Simmer covered for about 40 minutes, occasionally stirring; add more broth or pasta water if needed later.

    Cook the spaghetti in salted water until al dente. Drain well and plate. Stir oregano into the sauce and adjust seasoning. Pour the meat sauce over the pasta and sprinkle with freshly grated parmesan before serving.
