Apple-Onion Couscous
Apple-Onion Couscous: A gentle variation of an Arabic couscous classic with apple, onions, shrimp and fresh mint aroma.
Ingredients
- Salt
- 125 g Couscous
- 100 g Onions (2 onions)
- 6 sprigs Mint
- 150 g small apples (1 small apple)
- 2 tbsp olive oil
- 75 ml vegetable broth
- Pepper
- 180 g Shrimp (without head and shell, 6 shrimp)
Instructions

Bring 180 ml water with a pinch of salt to a boil, stir in the couscous and let it swell covered for 10 minutes.

Meanwhile, peel, halve and thinly slice the onions.

Wash, dry the mint, pluck the leaves and roughly chop them.

Wash, quarter the apple, remove the core and dice the flesh.

Heat 1 tbsp of oil in a non-stick pan and sauté the onions for 2 minutes. Add the apple pieces and sauté briefly.

Fluff the couscous with a fork. Add the couscous, mint and broth to the onion vegetables. Season with salt and pepper.

Rinse the shrimp briefly in a sieve and pat them dry with kitchen paper.

Heat a grill pan, add the remaining oil and fry the shrimp on each side for 2 minutes. Season with salt and pepper. Serve the shrimp with the apple-onion couscous.
