Ingredients

  • 400 g spaghetti
  • 250 g chicken liver
  • 1 onion
  • Salt
  • Pepper
  • 1 glass red wine
  • 2 tbsp olive oil
  • 3 sage leaves
  • 300 g tomatoes
  • parmesan

Instructions

    Wash the chicken liver and cut into small cubes. Peel and finely dice the onion.

    Heat olive oil in a pan, sauté the onion until translucent, add sage leaves. Add the liver cubes and fry quickly, season with salt and pepper. Reduce heat and deglaze with red wine, letting it reduce slightly. Boil tomatoes, peel and finely dice them. Add to the liver mixture and simmer on low heat for 15 minutes.

    Cook spaghetti in plenty of boiling salted water until al dente and serve with the sauce.

    Sprinkle grated parmesan to taste.
