Sourdough Burger Buns
Perfect for the garden party: The sourdough burger buns from Spoonsparrow are always a hit with family and guests!
Ingredients
- 20 g wheat sourdough starter
- 140 g whole wheat flour
- 120 g water
- 140 g spelt flour type 1050
- 0.5 tbsp honey
- 2 Eggs
- 2 Tbsp softened butter
- 1 tsp salt
- 1 tbsp Milk (3.5% fat)
- 2 tbsp white sesame seeds

On the evening before, mix the sourdough starter with whole wheat flour and 120 g water well. Cover and let it ferment at room temperature for 12 hours (overnight).

The next day, weigh out the spelt flour in a bowl. Add the sourdough, honey, and one egg, then knead everything together. Incorporate the butter. Dissolve the salt in 20 g water, add to the dough, and knead for another 10 minutes. Cover the bowl and let it rest for 1 hour.

Divide the dough into four pieces and shape each into a smooth ball. Place them on a baking sheet lined with parchment paper and press each one flat with your hand to about 2 cm thickness. Cover with a clean kitchen towel and allow to rise for another 30–60 minutes.

Whisk the remaining egg with 1 tbsp milk and brush the buns with this mixture. Sprinkle sesame seeds over the tops and bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for 15–20 minutes.

Remove from the oven while still hot and let cool on a wire rack.
