Ingredients
- 4 chicken breast fillets (about 120 g each)
- 2 Garlic cloves
- 2 cm galangal
- 1 stalk lemongrass
- 2 kaffir lime leaves
- 800 ml poultry broth
- 2 carrots
- 400 g Cauliflower
- 2 onions
- 2 tbsp tamarind paste
- 2 tbsp fish sauce
- 1 tsp roasted chili paste
- 1 tbsp lime juice

Rinse the chicken. Peel and finely chop the garlic and galangal. Split the lemongrass lengthwise, cut into pieces, and combine with galangal, garlic, kaffir lime leaves, and broth; bring to a boil. Add the chicken to the broth and simmer gently for about 10 minutes.

Remove the soup, let it cool slightly, then cube the chicken. Peel the carrots, halve them lengthwise, and slice into rounds. Wash and trim the cauliflower, breaking into small florets. Peel the onions, halve them, and cut into fine strips.
