Ingredients

  • 40 g soft butter
  • Salt
  • nutmeg
  • 1 egg
  • 50 g semolina
  • 1 l clear beef broth
  • black pepper (freshly ground)

Instructions

    Whisk the butter with ½ tsp salt and a pinch of nutmeg until frothy. Beat in the egg and semolina, then let the dough rest for at least 20 minutes.

    Bring the broth to a boil and season with salt and pepper. Using two teaspoons dipped in water, cut out dumplings from the dough. Drop them into the simmering broth and cook over gentle heat for about 15–20 minutes until tender.
