Ingredients
- 400 g parsley root
- 100 g celeriac
- 100 g sweet potatoes (starchy)
- 1 onion
- 1 Garlic clove
- 2 tbsp olive oil
- 800 ml vegetable broth
- 100 ml heavy cream
- 2 tbsp Sour cream
- Salt
- ground pepper
- nutmeg
- fresh chopped dill
- chopped chives
Instructions

Peel and dice the parsley root, celeriac, and sweet potatoes. Peel and finely dice the onion and garlic, then sauté in hot oil until translucent.

Add the diced vegetables to the pan and cook briefly until they lose their color.

Deglaze with vegetable broth and simmer gently for about 20 minutes until the vegetables are tender.

Stir in the heavy cream, then puree the soup (optionally strain through a sieve) and adjust consistency by cooking longer or adding more broth if needed. Fold in the sour cream and season with salt, pepper, and nutmeg to taste.

Serve in bowls, garnished with fresh herbs.
