Ingredients

  • 1 l beef broth (optional with some vegetables)
  • 200 g veal mince
  • 1 egg yolk
  • 50 g chopped pistachios
  • Salt
  • Pepper
  • nutmeg
  • fresh parsley

Instructions

    Stir the pistachios and egg into the veal mince, seasoning with salt, pepper & nutmeg.

    Using two teaspoons, shape dumplings. In a large pot bring salted water to a boil and cook the dumplings for 3-4 minutes, but do not let them fully boil.

    Divide the broth among four soup bowls and place the dumplings in the soup. Garnish with parsley leaves.
