Ingredients

  • 2 white onions
  • 2 young potatoes
  • 1 Garlic clove
  • 2 handfuls dandelion flowers
  • 2 tbsp butter
  • Salt
  • Pepper
  • 1 tbsp flour
  • 800 ml vegetable broth
  • 200 g crème fraîche
  • a pinch nutmeg

Instructions

    Peel the onion, potato and garlic and dice everything very finely. Wash the dandelions, pat them dry and cut them into small pieces, leaving a few for garnish.

    Heat the butter in a pot, sauté the prepared ingredients while stirring, season with salt and pepper. Dust with flour and briefly brown it. Slowly stir in the vegetable broth. Mix in the crème fraîche. Bring the soup to a boil and let it simmer for about 7 minutes. Adjust seasoning with salt, pepper and nutmeg. Ladle into bowls and sprinkle with the remaining dandelion flowers before serving.
