Ingredients
- 1 onion
- 2 Garlic cloves
- 1 leek stalk
- 400 g salsiccia (or coarse bratwurst)
- 2 tbsp olive oil
- 150 ml dry white wine
- 800 ml meat broth
- 400 g green bean pods (peeled)
- 1 tbsp freshly chopped parsley
- Salt
- pepper (ground)

Peel and finely dice the onion and garlic cloves. Wash, trim, and slice the leek into rings. Separate the sausage meat from its casing and crumble it in a pot with hot oil until browned. Add the diced onion, garlic, and sliced leek and cook for 3-4 minutes. Deglaze with wine, pour in the broth, and simmer gently for about 15 minutes. In the last 5 minutes add the green bean pods and continue cooking until tender. Stir in parsley and season with salt and pepper to taste.
