Smoked Salmon Salad with Orange and Shrimp

Ingredients

  • 8 lettuce leaves
  • 3 red onions
  • 4 oranges
  • 400 g cooked shrimp (peeled)
  • Salt
  • Pepper (freshly ground)
  • 250 g smoked salmon (sliced)
  • 5 sprigs basil
  • 50 ml olive oil
  • salmon caviar (for garnish)

Instructions

    Wash and dry the lettuce leaves. Peel, halve, and thinly slice the onions. Peel the oranges with a knife to the flesh and cut out the segments between the membranes. Squeeze the juice of the last orange.

    Season the shrimp with salt and pepper. Cut the salmon into strips. Wash the basil, shake dry, and pluck the leaves from the stems. Whisk together the orange juice and olive oil.

    Arrange the lettuce leaves as a bed in shallow bowls. Gently combine all other prepared ingredients and distribute over the lettuce. Drizzle with the orange‑olive oil mixture and garnish with salmon caviar.
