Smoked Salmon Mousse with Watercress

Ingredients
- 3 sheets gelatin
- 2 tbsp milk
- 400 g smoked salmon
- 100 g yogurt
- 150 g mayonnaise
- 1 tbsp finely chopped shallots
- 3 tbsp Lemon juice
- Salt
- white pepper
- Tabasco
- 0.5 tsp paprika (sweet)
- 0.5 tsp chopped dill
- 100 ml heavy cream
- 1 handful watercress
- chopped chives for garnish

Soak the gelatin in cold water. Warm the milk and dissolve the gelatin in it, then let it cool slightly. Cut half of the salmon into small pieces and blend with yogurt until smooth. Mix the mayonnaise with the salmon-yogurt blend, add shallots and lemon juice, and season with salt, white pepper, Tabasco, paprika, and dill. Stir in the dissolved gelatin. Whip the heavy cream to stiff peaks and fold it in. Divide the mixture into four small molds, smooth the tops, and chill in the refrigerator for about 4 hours until set.

Rinse, wash, and dry the watercress with a salad spinner.

To serve, unmold the mousse by briefly dipping the mold in hot water. Plate the mousse, top it with the remaining salmon pieces, and garnish with watercress and chopped chives.
