Smoked Pork Tenderloin

Ingredients
- 1 untreated orange
- 4 juniper berries
- 1 tsp peppercorns
- 2 tsp black tea
- 100 g salt
- 4 pork tenderloins (each 600 g)
- vegetable oil (for the grill rack)

Wash the orange hot, dry it, thinly peel the zest and cut into strips. Finely crush the juniper berries and peppercorns in a mortar. Heat 500 ml of water, add the orange zest, tea, salt and the juniper-pepper mixture, bring to a boil, then let cool.

Wash and pat the tenderloins dry. Place them in a shallow dish, pour the brine over them, and let marinate for about 2 hours.

Remove them, rinse, pat dry again, and let air-dry on a wooden board for about 2 hours.

Heat the smoking wood chips in the smoker until they start to glow. Place the tenderloins on a lightly oiled rack and smoke at 150°C for about 25 minutes. Before serving, season all around with salt and pepper, and optionally serve with apple chutney and corn bread.
