Smoked Pork Belly with Kale

- 500 g smoked pork belly
- 2 onions
- 2 cloves of allspice
- piment seeds
- 1 l boiling water
- 600 g frozen kale
- 20 g lard
- Salt
- Pepper
- 750 g small boiled potatoes
- 6 tbsp cooking oil
- 2 tsp sugar

Rinse the smoked pork belly under running cold water and pat dry. Peel the onions, add them with allspice to 1 l boiling water, bring to a boil. Cook the meat for 90-105 minutes until tender.

Remove the cooked meat. Strain the broth through a sieve, measure out 500 ml. Add the meat, frozen kale, and lard to a pot, season with salt and pepper, and simmer for 30-45 minutes. Adjust seasoning with salt and pepper.

Peel the boiled potatoes. Heat cooking oil in a pan, fry the potatoes on all sides, sprinkle with sugar, and brown them.

Take the pork belly out of the kale, slice it, and arrange on a preheated plate with the roasted potatoes. Season the kale with salt and pepper before serving.
