Ingredients

  • 2 large onions
  • 2 Garlic cloves
  • 4 tbsp olive oil
  • 2 tbsp Tomato paste
  • 1 large can tomatoes (800 g drained weight)
  • 500 g ground meat
  • 8 tbsp breadcrumbs
  • 2 Eggs
  • 4 tbsp grated Parmesan
  • 3 tbsp mixed Italian herbs (finely chopped)
  • 600 g small boiled potatoes (from the day before, halved or quartered)
  • 2 tbsp butter
  • Salt
  • pepper (ground)
  • paprika powder
  • basil (for garnish)
  • spring onions (thin rings)
  • 100 g cooked green beans (for garnish)

Instructions

    Peel and dice onions and garlic cloves; sauté in 2 tbsp hot oil. Reserve half for the meatballs. Add the remaining tomatoes with liquid to the other half, crush roughly with a potato masher, and simmer uncovered for about 30 minutes.

    Combine ground meat, remaining sautéed onions and garlic, breadcrumbs, eggs, parmesan, and herbs; season well. Shape into small balls with damp hands. Brown in the remaining hot oil. Transfer to a plate and bake at 100°C for about 15 minutes until cooked through.

    Warm potato pieces in a lightly buttered nonstick pan. Season and taste the tomato sauce. Mix potatoes with sauce and meatballs, arrange on preheated deep plates, and garnish with basil, green beans, and spring onions.
